Executive Sous Chef – Resort Property Ulster

Choice People on behalf of Our Client are searching for the next up and coming hot shot on the food scene in Ireland. Excellent package on offer for the right candidate.

As Executive Sous Chef you will be responsible for overseeing the daily operations and the running of the Kitchens within this 5 Star resort property including 2 AA Rosette Restaurant & casual dining offering. This role reports to the Executive Head Chef.

The Successful candidate will have an eye for excellent food presentation, ordering of stock, waste management, budget management and upholding excellent hygiene standards. Alongside managing the team and ensuring consistent, quality food is served to the highest standard at all times.

The ideal candidate will come from a high end 4 or 5 Star hotel property with previous experience managing multiple outlets working with high end produce in a fine dining environment. This role will suit an experienced Executive Sous Chef with an excellent track record in the Irish hospitality industry.

Role Responsibilities:

* Overseeing the budget and operating to the agreed targets on food costs, labour costs and wastage in conjunction with the Executive Head Chef.

* Ensuring that HACCP and all statutory hygiene standards are adhered to and that all staff are trained to uphold excellent standards.

* Ensuring H&S compliance at all times.

* Ensure clear and effective communication between all departments in particular the Front of House team.

* Ensuring the profitability of the department through effective revenue generation, rostering to maximise the productivity of the kitchen staff, minimising waste, monitoring portion controls and carrying out regular stock takes.

* Provide coaching, training, and development for the kitchen team.

* Excellent management & strong leadership skills to manage and direct the

kitchen team.

* Have the ability to handle multiple tasks with attention to detail.

* Ensure that all maintenance issues are promptly reported and acted upon.

* Flexibility & ability to assist in the kitchens situated throughout the resort subject to business requirements.

* Be an energetic and capable individual with an emphasis on customer focus, revenue and profit generation.

* Have a genuine passion for food and the hospitality industry.

* Possess a strong work ethic and a commitment to harmonious Team Working.

* Hold excellent communication, influencing and leadership skills.

Desirable Requirements:

*At least 3 years at Executive Sous Chef Level

*Sous Chef and above at two previous properties within a hotel environment.
