Sous Chef – 4 Star Hotel Co Wicklow

Choice People on behalf of Our Client are recruiting for a Sous Chef to join an experienced Kitchen Brigade to assist with the running of Weddings, Casual Dining and all day service. There is a Live In opportunity available with this role if needed.

Responsibilities:

• Assists the Head Chef in managing the day-to-day operation of all food production and kitchen porter operations
• Assists the Head Chef in developing training plans, develops training material in accordance with hotel guidelines and implements training plans for the food production employees and other Food and Beverage employees
• Assists the Head Chef in developing and maintaining up-dated operations manuals for all food production and kitchen porter sections
• Assists the head chef in developing popular menus offering guests value for money in accordance with hotel guidelines, kitchen ethos & direction and guest feedback
• Conducts and maintains daily briefings and other meetings as needed to obtain optimal results
• Attends and participates to other meetings as required by the administrative calendar in the absence of the Head Chef or where deemed a requirement
• Assists the Head Chef in creating recipes and maintaining up-dated and accurate costing of all dishes prepared and sold in the Food and Beverage operation
• Works with Head Chef on roster planning and management needs

The ideal candidate should have the following attributes:

• One to two years in a Senior Chef de Partie role, Junior Sous Chef or Sous Chef role.
• Previous hotel experience with experience in busy bar food service.
• Previous experience in banqueting service in particular for weddings.
• Team player with excellent communication skills.
• Provide excellence in food preparation and presentation.
• Focused on quality, attention to detail and high service standards.
• Have a good working knowledge of HACCP.
• Applicants need to be fluent in English and have full working rights to work in Ireland.
