Job description

As Sous Chef you will be responsible for preparing, producing, and presenting a variety of dishes to the highest standard and quality. You will support the head chef to deliver a high standard of product and service across a variety of areas including outdoor catering, bar and bistro and event catering. In order to be a successful candidate for this role you must have a minimum of 2 years’ experience as a Junior Sous Chef/Sous Chef in a busy gastro bar/ bistro or hotel in Ireland.

Key Responsibilities:

  • Assisting in ensuring all kitchen staff are able to perform their duties to our 4-star standards.
  • Ensuring all guests queries are managed promptly and efficiently.
  • Ensuring all guest requests are met or suitable alternatives suggested instead. i.e. Special dietary needs, VIP’s, Special Requests
  • Assisting in maximizing revenues, cost percentages and menu structure through efficient management
  • Assisting Head Chef in updating all menus consistently and seasonally according to standard
  • Assisting Head Chef by ensuring that we check product satisfaction standards and consistency daily.
  • Assisting Head Chef by ensuring all kitchen staff make sure product is to standards prior to presentation to guests.
  • Assisting in updating hotel recipes and menu spec’s along with menu changes
  • Ensuring efficient service to guests at all times
  • Ensuring that staff have adequate supply of working tools and utensils to conduct their jobs to meet and exceed all standards.

Who we are looking for.

A candidate with:

  • 1-2 years’ experience in a similar position (suitable for a well-established junior sous chef looking to advance in their career)
  • HACCP Management Qualification Level 3 required.
  • Understanding & knowledge of compiling wage forecasts, rosters, monthly stock control & budgeting, cost control management
  • Fully competency in menu engineering and design
  • Ability to be responsible for creating an environment that promotes employee morale and encourages the team to have pride and commitment in their work.
  • Excellent Communication, Organisational and Leadership Skills
  • Strong knowledge and experience of implementing HACCP legislation.
  • Fluency in both written and spoken English required.
