Your Role:
- Culinary Excellence: Ensure the highest level of guest service in the food production areas, consistently maintaining 4-star standards.
- Hands-On Cooking: Prepare, supervise, and cook on your assigned station with precision and flair.
- Lead by Example: Oversee food production by commis chefs, providing guidance and support.
- Innovate Menus: Assist the sous chef with taste panels, menu classes, planning, stock control, and costing.
- Step Up as Needed: Deputize in the absence of the Sous Chef/Head Chef.
- Master the Menus: Be fully acquainted with all menus – from breakfast to a la carte.
- Promote & Sell: Assist with departmental promotions and sales opportunities.
- First In, First Out (FIFO): Implement effective food rotation practices.
- Quality Control: Ensure all mise en place is of the highest quality, addressing issues promptly.
- Train & Mentor: Conduct on-the-job training with commis chefs to enhance their skills.
- Keep Records: Maintain and update daily production sheets.
- Timely Service: Ensure all food items are delivered to the correct area on time.
- Maintenance & Safety: Report any equipment faults and ensure no misuse of kitchen tools.
- Cross-Train: Be versatile and work on other sections as needed.
- Clean as You Go: Adhere to strict cleanliness policies, keeping all areas tidy.
- Collaborate: Work closely with banquet/restaurant managers and waiting staff to ensure high guest satisfaction.
- Adhere to HACCP: Comply with all HACCP procedures and guidelines, documenting and reporting any non-compliance.
- Be Mobile: Be ready to work on any section of the kitchen, showcasing your versatility.
