Key Responsibilities:

  • Operational Management: Assist the Head Chef in the day-to-day operations of food production and kitchen porter services, focusing on hygienic standards, staff training, and consistent food quality.
  • Compliance Adherence: Ensure compliance with local health, safety regulations, brand standards, and hotel policies.
  • Training and Development: Develop and implement training plans for Food Production and Food and Beverage staff, maintaining updated operation manuals.
  • Menu Development: Collaborate on creating popular, value-for-money menus that align with hotel guidelines and guest feedback.
  • Briefings and Meetings: Conduct daily briefings and participate in other necessary meetings to achieve optimal results.
  • Recipe and Cost Management: Assist in creating recipes and maintaining accurate costings for all dishes.
  • Manpower Planning: Work with the Head Chef on planning and managing kitchen staff needs.

  • Culinary Skills: Strong cooking skills with a passion for high-quality, fresh, local, and seasonal produce.
  • Liaison Abilities: Effectively communicate with managers to ensure food quality and service standards.
  • Creativity: Ability to create new dishes.
  • Experience: Minimum of 2-3 years in a similar standard hotel.
